Francois Cahagne is the creator and owner of Croissant Gourmet. He was born in Saint-Omer, the Northern part of France and began his training to become a pastry chef at the age of 16 Francois moved to Paris by the time he was 23 years old to further his passion alongside his mandatory military service. Due to his skill, he was tapped to become the personal pastry chef for the Ministry of the Armed Forces (French equivalent to the Secretary of Defense).
After his service ended, Francois decided to work in several restaurants along the Champs-Elysees, including world the renowned LeNotre. He counts Pierre Herme among his mentors. After the invaluable experience, Francois decided it was time open his own bakery back in his hometown.
Ten years later with two thriving bakeries under his belt, Francois began to dream of opening his new bakery concept in America with the same quality made-from-scratch products that made him successful. With the help from his younger brother Philippe, he opened Croissant Gourmet in Winter Park in 2008.
Francois Paille joined Croissant Gourmet as our Executive Pastry Chef in February of 2017. He hails from Haguenau, France which is just north of Strasbourg. There, he studied the art of Pastries and Chocolates. He quickly excelled and moved on Lyon, France to become the Executive Pastry Chef and Chocolatier of Patisserie Pepin.
After elevating their service, he took a sabbatical and toured Europe for one year, tasting some of the best pastry and bakery items the world has to offer.
Francois soon found himself in Miami, Florida, working to open Le Macaron. After their success, he started working as Executive Pastry Chef for Meilleur Ouvrier de France Chef Georges Berger's bakery Chocolate Fashion, located in Coral Gables.
He has since relocated to Orlando, FL to join our team!
